Sometimes the best stews are the results of accidents.
I used too much stock in the slow cooker yesterday for the pot roast. So much that there was enough liquid left over to use as stew base today.
Sooo after a tossed in a few more veggies and shredded the leftover roast, I made a light roux for thickening. I was impatient though and I didn't let the butter cook down enough so I ended up with far too much for the stew but not enough to bother letting cool and saving for the next gravy.
Figured what the hell, tossed ALL of it in the slow cooker and stirred it up nice. Wow, did it thicken far too much. I could never use this as stew. What to thin it with? I didn't have any stock left over. I didn't want to use water. What to use?

It's turning out nicely. The kitchen smells wonderful. A mix of the toasty nutty goodness of cooked roux and simmering hearty homemade stew.
Damn I love cold weather.
